Ingredients:
8 cups of fresh blackberries
7 cups of granulated sugar
2 tablespoons freshly squeezed lemon juice
1/4 cup of dried damiana leaf
1 packet of liquid pectin
Instructions:
In a medium saucepan, combine the blackberries and sugar. Gently mash together with a potato masher until evenly combined, and then stir in the damiana.
Cook over medium-high heat, stirring often, until the mixture comes to a boil.
Reduce heat to low and simmer for 5 minutes.
Add the lemon juice and stir to combine.
Strain your mixture through a sieve to remove the damiana leaf and berry seeds.
Increase the heat back to medium-high and add the pectin.
Stir constantly for 2 minutes, until the pectin has dissolved, and the mixture has thickened.
