Pumpkin Spice Bread Recipe

We love spices, so we were especially generous with the pumpkin spice flavors when we made this spiced pumpkin bread.

 

A perfect treat to share with family and friends this fall, we divide our recipe in to three individual miniature loaf pans to make gift giving even easier.

 

You will need the following ingredients:

 

1 ¾ cup all purpose flour

1 cup brown sugar

1 tsp baking powder

1 tsp baking soda

½ tsp salt

8 tsp true cinnamon powder

1 tsp cardamom seed powder

½ tsp nutmeg powder

¼ tsp allspice powder

½ tsp clove powder

1 tsp vanilla extract

¼ cup plain Greek yoghurt

1 1/2 cups pumpkin puree

1 large egg

½ cup melted coconut oil (plus a bit extra for oiling your loaf pans)

Pumpkin seeds for garnish (optional)

 

Preheat oven to 350F. Coat the inside of your loaf pans with a small amount of coconut oil.

 

In a large bowl, evenly combine all ingredients except for yoghurt, pumpkin, egg, coconut oil, and pumpkin seeds. In a second, smaller, bowl, combine remaining ingredients except for the pumpkin seeds.

 

Add wet ingredients to dry and whisk until evenly combined. Fill loaf pans ¾ full with batter. Garnish the tops of the loaves with pumpkin seeds, pressing gently to ensure that they are secured in the batter.

 

Bake for approx. 45 minutes, or until fully cooked. Remove from oven and allow to cool.
