Marshmallow Root Soup Recipe

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and sauté until softened, about 5 minutes.

  2. Make a small pouch with the cheesecloth, and seal the marshmallow root inside so that you can easily remove it from the soup once you have finished cooking.

  3. Add the vegetable stock, potato, marshmallow root pouch, thyme, garic powder, salt and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes or until the potato is tender.

  4. Remove and discard the marshmallow root.

  5. Stir in the heavy cream. Puree the soup using an immersion blender or transfer it to a regular blender and blend until smooth.

  6. Serve warm and garnish with parsley. Enjoy!
