Nettle Potato Soup Recipe
This nettle and potato soup recipe is perfect for a cold night. Quick and simple, the potatoes add a rich creamy texture while keeping this soup vegan and low calorie. Please note, it is important to carefully sift through your nettles to ensure that you have removed any sticks or stones that may be present.
You will need the following ingredients:
1 large white onion
3 russet potatoes
1 carrot
10 cups soup broth
1 tbsp garlic powder
1 tbsp dried basil leaf
1 cup dried nettle leaf (sifted to remove any sticks and rocks)
Salt and pepper to taste
Slice your onion, potato, and carrot into large chunks and add them into a large pot with 10 cups of soup broth. Simmer until softened, about 15 minutes. Remove and place in a blender. Pulse your vegetables and liquid until their texture is mostly smooth. Add back into your soup pot and set heat to medium/low. Add in garlic, basil, nettle, salt, and pepper. Simmer for approximately 20 minutes before serving.
