This delicious panko and shiitake mushroom crusted salmon is the perfect way to indulge in a restaurant-style meal without having to leave your home. The crunchy panko and earthy shiitake mushrooms pair perfectly with the moist, succulent salmon, creating an amazing combination of flavors and textures. All you need is a few simple ingredients and a few minutes to put together this amazing dish.

The Benefits of Shiitake Mushroom

Shiitake mushrooms are known for their anti-inflammatory, antioxidant, and immune-boosting properties. They contain compounds that can help reduce inflammation, fight off infection, and boost the body’s natural defenses.

Shiitake mushrooms are also packed with vitamins and minerals. Shiitake is a great source of Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, zinc and manganese. These vitamins and minerals are essential for healthy cell growth, brain function, and immune system health.

Ingredients:

  • 1 cup of panko

  • 2 tablespoon of shiitake mushroom powder

  • 1 teaspoon of freshly ground black pepper

  • 1 teaspoon of onion powder

  • 1/2 teaspoon of salt

  • 700g salmon fillet

  • 5 teaspoons of cooking oil (plus extra for coating salmon) 

Instructions:

1. Preheat oven to 425F.

2. In a bowl combine panko, shiitake mushroom powder, black pepper, onion powder, salt, and 5 tsp of cooking oil.

3. Mix until evenly combined.

4. Place salmon on a lined baking sheet. If you are using salmon with the skin still on, ensure that the skin is facing down.

5. Coat the exposed side of the salmon lightly with cooking oil, and then place panko mixture on top of the salmon.

6. Bake for 10-12 minutes, or until salmon is cooked. Enjoy!
