Decadent Whiskey and Star Anise Pudding
This whiskey and star anise pudding is a must-try. The warm spice of star anise pairs beautifully with the deep caramel notes of whiskey, creating a silky pudding that tastes incredible over fresh berries. Even better? You can make it ahead of time—perfect for dinner parties or when you just want a sweet treat ready to go.
For an alcohol-free version, simply omit the whiskey and substitute more milk.
Recipe Instructions
Ingredients:
- 1/3 cup brown sugar
- 1/3 cup whiskey
- 1 2/3 cups soy milk
- 1/4 cup whole star anise pods
- 1/2 teaspoon salt
- 3 tablespoon cornstarch
- 1/2 teaspoon vanilla bean powder
Instructions:
- In a small pot add the brown sugar, whiskey, soy milk, star anise, and salt.
- Bring to just below a boil.
- Maintain this temperature for 5-10 minutes, or until your liquid tastes of star anise. Once you are satisfied with the flavour, strain the star anise pods from the mixture and return the liquid to the pot.
- (Optional) You can rinse off the star anise pods and save them to use as a garnish when serving.
- Bring your liquid to a boil, and add in the cornstarch, whisking frequently to ensure that no clumps form.
- After approximately 10-15 minutes, your mixture will have thickened considerably. Cook for 2-3 minutes longer, and then remove from heat.
- Stir in vanilla powder and place your pudding in the fridge to chill for at least three hours.
- Serve and enjoy! We suggest serving this pudding with fresh blueberries or blackberries.
