Whiskey and Star Anise Pudding Recipe

Decadent Whiskey and Star Anise Pudding

This whiskey and star anise pudding is a must-try. The warm spice of star anise pairs beautifully with the deep caramel notes of whiskey, creating a silky pudding that tastes incredible over fresh berries. Even better? You can make it ahead of time—perfect for dinner parties or when you just want a sweet treat ready to go.

For an alcohol-free version, simply omit the whiskey and substitute more milk.

Recipe Instructions

Ingredients:

  • 1/3 cup brown sugar
  • 1/3 cup whiskey
  • 1 2/3 cups soy milk
  • 1/4 cup whole star anise pods
  • 1/2 teaspoon salt
  • 3 tablespoon cornstarch
  • 1/2 teaspoon vanilla bean powder

Instructions:

  1. In a small pot add the brown sugar, whiskey, soy milk, star anise, and salt.
  2. Bring to just below a boil.
  3. Maintain this temperature for 5-10 minutes, or until your liquid tastes of star anise. Once you are satisfied with the flavour, strain the star anise pods from the mixture and return the liquid to the pot.
  4. (Optional) You can rinse off the star anise pods and save them to use as a garnish when serving.
  5. Bring your liquid to a boil, and add in the cornstarch, whisking frequently to ensure that no clumps form.
  6. After approximately 10-15 minutes, your mixture will have thickened considerably. Cook for 2-3 minutes longer, and then remove from heat.
  7. Stir in vanilla powder and place your pudding in the fridge to chill for at least three hours.
  8. Serve and enjoy! We suggest serving this pudding with fresh blueberries or blackberries.
