Black Bean, Burdock Root, Goat Feta, and Pumpkin Patty Recipe

Black beans, burdock root, pumpkin, and goat feta. These patties have a lot going on!

 

High in protein and full of complex carbohydrates for sustaining balanced energy levels, these patties are versatile enough to have for breakfast, lunch, or dinner.

 

We suggest garnishing with cilantro and a spicy salsa.

 

You will need the following ingredients:

 

1 cup cooked black beans

1/3 cup pumpkin puree

1/3 cup crumbled goat feta

4 large eggs

½ tsp ground coriander seed

¼ tsp smoked paprika

½ tsp chipotle powder

½ tsp garlic powder

½ tsp onion powder

2 tbsp burdock root powder

Salt and pepper to taste

 

In a large bowl, add black beans and partially mash. Leave about 30% of the beans un-mashed. Add all remaining ingredients to bowl and mix well until a loose batter forms, ensuring that all ingredients are evenly distributed.

 

Heat a lightly oiled frying pan over medium heat. With a large spoon scoop your batter (approx. ¼ cup) into the pan and fry for 3-4 minutes, or until patty is lightly browned on one side. With a spatula, gently flip your patty and continue to cook until it is browned on both sides. Remove from heat and allow to cool.

 

Repeat with remaining batter. This recipe makes approx. 8-10 patties.
