Calendula and rye sable cookies? These little treats sound impressive but are actually really easy to make.
They have a delicious nutty flavour that goes great with coffee or tea, and isn’t too sweet. If you need a bit more sugar to satisfy your sweet tooth, simply add more maple syrup to this recipe.
If you have already made the calendula infused coconut oil we posted previously, these cookies will only take about 10 minutes of active prep time.
In a bowl combine the following ingredients to form your dough:
2 1/2 cups rye flour
8 tbsp arrowroot powder
1 tsp salt
1 cup melted calendula infused coconut oil
8 tbsp maple syrup
1 tsp lemon juice
Form the dough into a 2 inch thick log, wrap in reusable beeswax food wrap, and refrigerate for at least 20 minutes.
Next, heat your oven to 350F, and when your dough is ready to come out of the fridge, slice it into 1/4 inch thick medallions.
Place the cookies on an un-oiled baking sheet. At this point we like to garnish them with a bit more salt and some calendula petals, but be creative and use chopped nuts, sesame seeds, sugar, or whatever strikes your fancy. Bake for 12-15 minutes and allow to fully cool before serving.
