Herbal Marshmallow Recipe

These juniper berry marshmallows use real marshmallow root and juniper berries. Quick to make, they can be stored in the fridge for several days, or in the freezer for up to several months.

Ingredients:

  1. Whisk together ½ cup of room temperature water and the gelatin.

  2. In a medium saucepan with your candy thermometer attached, add the other ½ cup of water, honey, juniper, marshmallow root, and salt.

  3. Heat with medium heat until temperature reaches 240F.

  4. Remove from heat.

  5. In your mixer add the gelatin water and vanilla extract.

  6. Set temperature to low, and slowly pour in the heated honey and juniper liquid.

  7. Once combined, increase the mixer speed to high and continue to whip for another 10-15 minutes.

  8. Scoop your marshmallow mixture into a parchment paper lined pan and allow it to set for several hours, or as long as overnight in the fridge.

  9. Once set, remove marshmallows from the pan, slice, and enjoy!
