Star Anise and Whiskey Pudding Recipe

This decadent whiskey and star anise flavoured pudding is excellent served over berries, and you can even make it a few days in advance if needed. For an alcohol-free version, simply omit the whiskey and substitute more non-dairy milk.

You will need the following ingredients:

1/3 cup brown sugar

1/3 cup whiskey

1 2/3 cup cashew, almond, or soy milk

¼ cup star anise pods

½ tsp salt

3 tbsp cornstarch

½ tsp vanilla bean powder (optional but recommended)

In a small pot add the brown sugar, whiskey, non-dairy milk, star anise, and salt. Bring to a boil and then simmer for 2-5 minutes, or to taste. Once you are satisfied with the flavour, strain the star anise pods from the mixture and return the liquid to the pot. Save the star anise pods to rinse and use as a garnish when serving.

Next, bring the liquid to a low simmer and add in the cornstarch, whisking frequently to ensure that no clumps form. After approximately 10-15 minutes, your mixture will have thickened considerably. Cook for 2-3 minutes longer, and then remove from heat. Stir in vanilla powder (optional) and place your pudding in the fridge to chill for at least three hours. Rinse the star anise pods that you used earlier and place them as a garnish when serving.
