Vegan Shiitake Lemongrass Jerky Recipe
Shiitake mushrooms prepared as jerky are vegan culinary brilliance. These savory treats are perfect on their own but can also be added to salads and sandwiches. You may want to double or triple this recipe.
You will need to following ingredients:
1 ½ cups dried shiitake mushrooms (stems removed)
3 cups vegetable broth
3 tsp dried lemongrass
¼ cup tamari
1 tsp apple cider vinegar
1/3 tsp chilli powder
¼ tsp garlic powder
1/8 tsp ground black pepper
¼ tsp onion powder
In a small saucepan, heat soup stock and lemongrass. Simmer for 5 minutes, remove from heat, and strain. In a sealed container suitable for marinating, add all other ingredients (including mushrooms). Add broth to marinade container, seal, and allow to marinate in the refrigerator for at least 12 hours.
Once your mushrooms have finished marinating, preheat oven to 200F, and line a baking sheet with parchment paper. Remove mushrooms from marinade and spread in a single layer on your baking sheet. Place in oven for approx. 2 hours, until sufficiently dried, and firm but chewy in texture. Remove from oven and allow to cool before storing in refrigerator.
